- 2 banana(s) ripe, mashed
- 1 avocado ripe, mashed
- 2 eggs large
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil melted
- 1 teaspoon pure vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped walnuts or sugar-free chocolate chips, optional
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, combine the mashed bananas and avocado.
- Add the eggs, honey or maple syrup, melted coconut oil, and vanilla extract. Mix well.
- In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, and cinnamon.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Fold in the chopped walnuts or chocolate chips, if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
