Skip the Taco Truck Line: 15 Birria Recipes That Turn One Pot Into a Week of Dinners

If you have ever stood in a taco truck line watching people dunk red, crispy tacos into a cup of broth, you already know why birria took over America. Birria comes from Jalisco, Mexico, where it was traditionally made with goat. Today most cooks use beef, slow-simmered in a sauce of dried chiles and warm spices until it falls apart. The best part: one pot on Sunday gives you tacos, ramen, grilled cheese and more all week, plus a rich broth called consomme for dipping. Your slow cooker can do most of the work. Here is how to make it at home..

This is the one everybody lines up for. Tender shredded beef goes into corn tortillas that are dipped in the red fat skimmed from the top of the pot, then fried until crisp and stained red. Each taco is dunked into a cup of hot consomme before every bite. It takes time, but most of it is hands-off simmering. Have you tried birria from a taco truck yet?
