Cookie Monster Cakesicles for a Sesame Street Party

I’ll be honest, I love a good Sesame Street party.
These are absolutely adorable! They may just be the cutest cakesicles you’ll ever make. They will definitely brighten up any occasion you decide to make them for or serve them at.
Each one seems to have its own personality, and they’re sure to bring smiles wherever they show up. They’re easy to make, and will surely be a hit. Put this one in your favorites!
Cakesicles Recipe
- 1 white cake mix (we used Betty Crocker)
- 1 package of Betty Crocker chocolate chip cookie mix (make into small cookies)
- 1 package of white chocolate candy melts
- 1 tube of aqua blue food coloring gel
Frosting
- Vegetable shortening – 1 cup
- Butter – 2 sticks
- Powdered sugar – 2 lb
- Milk – 4T
Tools Needed
- Electric mixer
- Cakesicle molds (they come with popsicle sticks for the molds)
- Pastry bag
- Frosting tip
- 9 X 13 dish
- Parchment paper
- Cookie sheet
- Candy eyes
Make the Cake
Start by making the cake; follow the package directions for ingredients and mixing the cake. Place parchment paper in the bottom of the 9 X 13 dish, and pour the cake batter into the dish. Bake as directed. When the cake is done, cool completely.
Make the Cookies
Make the cookies following the directions on the package. They should be made small for the mouth decorations. Cool the cookies.
Make the Frosting
While the cake is cooling, mix the frosting. In the mixing bowl of a stand mixer, blend the vegetable shortening and butter until smooth and creamy. Add the powdered sugar a little at a time, alternating with the milk, and blending between additions, until the frosting is thick and creamy.
Set aside 1/2 cup of frosting to bind the cake.
Add blue food coloring gel until desired color is achieved. Cover, and place frosting in the refrigerator until time to decorate the cakesicles.
Form the Cakesicles
When the cake is cool, break the cake up into crumbs, right in the dish you baked it in, and sprinkle mini chocolate chips over the cake. Add the frosting to the cake until you have equal amounts of cake and frosting, and a creamy ball.
NOTE: It should only take about 1/2 cup to bind the cake. If necessary, you can take some of the blue frosting from the fridge!
Set the cake aside. In a microwave safe bowl, melt eight squares of the white chocolate candy melts in the microwave on 10 second intervals until the chocolate is melted. Remove from microwave, and add the aqua gel food coloring until you have the desired color of aqua blue.
With a spoon, place a heaping Tablespoon of the blue candy coating into each of the cake-sicle molds, and turn the molds back and forth, covering the inside of the molds with the blue coating.
Follow the guides at the bottom of the cakesicle mold to insert the sticks. You will insert them directly into the holes and blue candy coating.
Place the mold into the freezer, and allow the candy coating to set (about an hour). Remove and place on your work surface.
Press the cake mixture into the molds until the molds are full and the mixture is level with the sides.
Melt more candy melts and add some blue food coloring. Place a generous amount of this coating over the cake mixture(s), sealing the cakesicles in the molds.
Place the molds back in the freezer and allow them to remain in the freezer for at least 4 hours, or overnight for best results. When you’re ready to decorate the cakesicles, remove them from the molds.
Place the frosting tip in the pastry bag, and place the blue frosting (from the fridge) in the bag. Squeeze the frosting onto the top of the cakesicles in quick short bursts, until the cakesicle is covered with the frosting (see below).
Add eyes, and place half of a mini chocolate chip cookie for the mouth. Your Cookie Monster cakesicles can be served immediately.
If not serving until later, place the cakesicles in a single layer on paper and place in the refrigerator until time to serve. Enjoy!
