Funfetti Cookies with Sprinkles: A Party in Every Bite

So many big things have happened during my lifetime. Apple was started as a company. The Berlin Wall fell. Nelson Mandela was released. There was a huge war on drugs.
AND – Funfetti cake mix came out. In 1989, released by Pillsbury.
It was a game changer for my brothers and I as children. The big request for birthdays that year? Funfetti cakes. From a box. ALL the way around.
The idea of sprinkles in food was novel, and I still feel the same way about the idea today. Something about it puts a smile on my face. Maybe it’s all the color?
We’ve done funfetti donuts before, and it was time to make an important and unique cookie recipe: funfetti cookies!
These soft and chewy cookies are buttery and loaded with sprinkles. They are perfect for parties, and of course you can customize the sprinkle colors to make them work for any holiday or celebration.
Here’s what you’re going to need for these confetti cookies.
Ingredients
- 1 cup butter, softened
- 1 1/4 cup white granulated sugar
- 1 teaspoon vanilla
- 1 large egg, room temperature
- 2 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup rainbow sprinkles + more for the top
Keep these cookies in an airtight container at room temperature for up to a week. They’ll last a few weeks in the refrigerator.
You can also freeze them in an airtight container for up to six months. When you bring them out of the freezer, let them rise to room temperature naturally as opposed to microwaving.

Ingredients
- 1 cup butter softened
- 1 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1 egg(s) large, room temperature
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sprinkles + more for the top
Instructions
- Preheat oven to 375℉ and line a cookie sheet with parchment paper.
- Mix the butter and sugar together with your hand mixer until creamy and combined.
- Mix in the egg and vanilla with hand mixer.
- Add in the flour, baking powder, baking soda, and salt, then stir until just combined (dry ingredients have disappeared).
- Fold in the sprinkles into the dough until just combined.
- Chill the dough for at least 1 hour, or longer if possible.
- Use a 2 tablespoon cookie scoop and place cookie dough on the cookie sheet, with 2-3 inches between each scoop. These cookies get big!
- Sprinkle more sprinkles on top of cookie dough and bake for about 11-14 minutes.
- Remove the cookies from the oven. The centers may still look too soft; they will set more as they cool. Let cool for a few minutes before removing to the wire rack.
