Preheat oven to 375℉ and line a cookie sheet with parchment paper.
Mix the butter and sugar together with your hand mixer until creamy and combined.
Mix in the egg and vanilla with hand mixer.
Add in the flour, baking powder, baking soda, and salt, then stir until just combined (dry ingredients have disappeared).
Fold in the sprinkles into the dough until just combined.
Chill the dough for at least 1 hour, or longer if possible.
Use a 2 tablespoon cookie scoop and place cookie dough on the cookie sheet, with 2-3 inches between each scoop. These cookies get big!
