  • 1 cup peanut butter
  • 1 egg
  • 14 Reese’s Cups

Tips and Thoughts for This Recipe

If you want the cookie to cool completely so the chocolate hardens again, it could take up to one hour.

Cookies can be stored at room temperature for up to 5 days in an airtight container or you can freeze the cookie dough balls and bake a few at a time when needed.

Reese’s Peanut Butter Cookies

Ingredients

  • 1 1/2 cup granulated sugar divided
  • 1 cup creamy peanut butter
  • 1 egg(s)
  • 14 Reese’s peanut butter cups

Instructions

  • Place your peanut butter cups in the freezer while you make this recipe so they get nice and cold.
  • Line a baking sheet with parchment paper and preheat the oven to 350 degrees.
  • In a small mixing bowl, combine 1 cup sugar, peanut butter, and egg together.
  • Use a two tablespoon cookie scoop to create cookie dough balls and roll each cookie dough ball in the remaining granulated sugar.
  • Place the cookie dough balls about 2” apart on the prepared baking sheet.
  • Use a fork to create criss cross lines by gently pushing down. You want the cookies to stay thick and not spread too much, so don’t press down too hard when you make the criss cross lines.
  • Bake the cookies for 9 minutes or until the top looks set – do not over bake.
  • Remove from the oven and let cool on the baking sheet for 2-3 minutes.
  • Remove the peanut butter cups from the freezer and press a peanut butter cup onto the center of each cookie and let cool completely on the baking sheet or serve warm while the chocolate is melty.
