Former royal chef Darren McGrady, who cooked for the royal family at Buckingham Palace for 11 years, has said the Queen was a chocoholic and that chocolate biscuit cake was a staple at her afternoon tea. According to Marie Claire, he said she always wanted to finish the whole cake. Prince William loved it too and chose it as his groom’s cake in 2011. It needs no oven at all.

You will need: 8 oz rich tea biscuits or plain tea cookies, 1/2 cup (1 stick) unsalted butter, 1/2 cup sugar, 4 oz dark chocolate chopped, 1 egg, 1/2 teaspoon vanilla. Topping: 8 oz dark chocolate melted, 1 oz white or milk chocolate for decorating.

How to make it: 1. Grease a 6 inch cake ring or small springform pan and line it with parchment. 2. Break the biscuits into almond size pieces. 3. Cream the butter and sugar, then beat in the 4 oz of melted and slightly cooled chocolate. 4. Beat in the egg and vanilla, then fold in the biscuits. 5. Press into the pan and chill 3 hours until firm. 6. Unmold, pour the melted topping chocolate over it, decorate and chill again before slicing.
