Preheat your oven to 350℉ and line a bread pan with parchment paper.
Make the apple filling by adding your diced apples, 1/4 cup brown sugar, and 1 teaspoon of cinnamon to the medium bowl and stir well.
Make the topping by adding the 1/3 cup brown sugar and 1 teaspoon of cinnamon to your small bowl and stir well, or whisk.
Add the apple cider vinegar to 1 cup milk. Let sit for five minutes.
In a bowl, whisk together the dry bread ingredients: flour, brown sugar, cinnamon, baking powder, and baking soda.
After five minutes, add the milk mixture and applesauce to the dry mixture and stir well.
Pour about two-thirds of the bread mixture into your loaf pan, then add about two-thirds of your apple mixture on top of the bread mixture.
Pour the rest of your bread mixture on top and spread to cover the apples, then add the rest of the apple mixture on top, then pour sprinkle the topping on evenly.
Bake for at least 50 to 60 minutes, or until a toothpick comes out of the bread clean, or with a few dry crumbs, when testing if it is done.
Cool in pan for at least 20 minutes before removing and allowing to finish cooling on a cooling rack. Wait until completely cool before slicing and enjoying.
