Prepare the apple cider by simmering it in a small saucepan for about 15-20 minutes until reduced in half (to about 3/4 cup). Cool to room temperature.
Preheat oven to 400°F. Grease a muffin pan or insert liners for 16 muffins.
In a large bowl, whisk together the apple cider, butter, sugar, brown sugar, buttermilk, and vanilla.
Add the eggs and whisk until fully combined.
Add the flour, baking powder, cinnamon, salt, and nutmeg. Mix well with a spoon or spatula utensil.
Spoon the batter into muffin cups and fill to 2/3 full (3 tablespoons in each cup).
