  • 1/2 cup brown sugar packed
  • 1/2 cup buttermilk
  • 1 teaspoon pure vanilla extract

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg

Instructions

  • Prepare the apple cider by simmering it in a small saucepan for about 15-20 minutes until reduced in half (to about 3/4 cup). Cool to room temperature.

  • Preheat oven to 400°F. Grease a muffin pan or insert liners for 16 muffins.

  • In a large bowl, whisk together the apple cider, butter, sugar, brown sugar, buttermilk, and vanilla.

  • Add the eggs and whisk until fully combined.

  • Add the flour, baking powder, cinnamon, salt, and nutmeg. Mix well with a spoon or spatula utensil.

  • Spoon the batter into muffin cups and fill to 2/3 full (3 tablespoons in each cup).

  • Sprinkle each muffin with 1-2 teaspoons of Sugar In The Raw. Bake for 14-16 minutes or until a toothpick inserted in the center of a muffin comes out clean.

  • Allow the muffins to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely.
