Bacon Chocolate Chip Cookies

Ingredients

  • 2 cups all-purpose flour sifted
  • 1/2 tsp baking powder + 1/4 tsp
  • 1/2 tsp baking soda
  • 1/3 tsp sea salt
  • 1/2 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1 tsp pure vanilla extract
  • 2 egg white(s) large
  • 1/2 cup dark chocolate chips
  • 3/4 cup bacon crispy and crumbled
  • 1/2 cup pretzels broken into pieces
  • 1/2 cup white chocolate chips optional

Instructions

  • Preheat the oven to 400 degrees F. Line a baking sheet with the parchment paper or place your cooking mat down. Cook the bacon for about 18 - 20 minutes, or until the desired crispness. Then you're going to remove the bacon from the oven and transfer to a paper towel lined plate to let the bacon grease drain.
  • Combine sifted flour, baking powder, baking soda, and salt in a medium size bowl; set aside.

  • Cream butter until peaks form. After that you'll add the brown sugar, and combine until JUST mixed together.

  • Add eggs whites and vanilla extract. Mix until just combined.
  • Fold in the dark chocolate chips (the white are optional).
  • Add 1/3 of the flour mixture at a time until it is all incorporated into the cookie dough. Stir until just combined.
  • Make sure you drained the bacon well so you don't get extra bacon fat in the cookies. Crumble the bacon into pieces. Add the bacon pieces and stir.
  • Evenly divide cookie dough into two discs and wrap in plastic wrap. Chill in the refrigerator for 60 minutes.
  • Remove cookie dough from refrigerator and make 2T balls. Roll dough in the palm of your hand into a ball and place on cookie sheet.
  • Turn oven to 350 degrees. Bake for 20 minutes.
  • Remove from oven and, while cookies are still hot, insert broken pretzel pieces into cookies. Allow to cool completely before serving.
