Ingredients

  • 15 ounces yellow cake mix 1 box
  • 3 banana(s) medium, overripe, mashed
  • 2 eggs
  • 6 T vegetable oil or canola
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  • Preheat the oven to 350 degrees. Prepare a muffin tin with cupcake liners spritzed with nonstick cooking spray.
  • Peel the bananas, place them into a large bowl and mash them.
  • Add the eggs, oil, vanilla, and cinnamon to the bowl with mashed bananas and mix together until blended.
  • Add the yellow cake mix to the batter. Mix the batter just until evenly blended and the cake mix disappears.
  • Divide the batter between the 12 muffin cups.
  • Bake for 20 to 23 minutes or until a toothpick inserted in the middle returns clean.
  • Place the muffin tin on a wire rack and cool slightly. Then remove then muffins to cool completely.
