Ingredients

  • 1/2 cup butter softened
  • 1 cup brown sugar
  • 2 egg(s)
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips

Instructions

  • Preheat the oven to 350°F/180°c. Line an 8 inch square baking tin with parchment paper, or spray with non-stick cooking spray. Set aside.
  • Chop the butter into cubes and place in a light colored saucepan (this will allow you to check the color of the butter). Place the saucepan over a medium heat. Melt the butter, then bring to a simmer. Continue to simmer the butter, stirring often, for around 5 minutes or until the butter has turned a golden brown color. Remove from the heat and immediately pour the butter into a large mixing bowl.
  • Add the brown sugar to the butter in the mixing bowl and whisk until well combined. Add the eggs and vanilla extract and whisk once again until well combined.
  • Add the flour, baking powder and salt to the butter mixture. Mix until just combined.
  • Fold through the semi-sweet and white chocolate chips.
  • Pour the blondie batter into the prepared baking tin. Bake for 25 minutes, or until just cooked through.
  • Set aside to cool in the tin completely before removing and slicing.
