  • Preheat your oven to 350 F and pull out a cookie sheet.

  • Place your salted butter in a large mixing bowl with the light brown sugar and, using an electric hand mixer, mix the ingredients together until they are mostly homogenous.

  • Add the vanilla and eggs to the bowl and mix again until the eggs and vanilla are fully incorporated into the creamed butter.

  • Keeping the hand mixer on a low speed, add the baking powder, baking soda, and flour to the bowl. Mix the cookie dough continually until there are no pockets of dry flour in the cookie dough.

  • Gently fold in the semi-sweet chocolate chips to ensure they are evenly distributed throughout the dough.

  • Form disc shaped balls of dough about 2 inches in diameter and bake them 6 at a time for 11 minutes.

  • Once all the cookies finish baking, place them in the freezer for 20 minutes to cool.

  • After the cookies have cooled, place a scoop of ice cream on half of the cookies and top with the remaining cookies to form sandwiches.
