Strawberry Cake Brownies

This delicious brownie recipe with strawberry cake mix is so easy to make! Moist with a crunchy topping and sprinkles - perfect for Valentine's Day.

Ingredients

  • 15.25 oz strawberry cake mix 1 box
  • 1/3 cup evaporated milk
  • 1 stick butter melted
  • 10 Oreos
  • 1/3 cup heart sprinkles

Instructions

  • Preheat oven to 350F. Line a square baking pan with aluminum foil. Spray with cooking spray and set aside.
  • Add dry cake mix to a large bowl. Stir in the evaporated milk and melted butter until combined completely. The mixture will be somewhat crumbly.
  • Press the brownie cake mix into prepared pan. You don't have to press down too hard; just make it even.
  • Sprinkle crushed cookies and sprinkles on top of batter and press gently.
  • Bake for 17-22 minutes or until set and cooked through. Cool completely before removing foil from pan and cutting into bars.

Notes

Pick a moist strawberry cake mix for this recipe so that your brownies don't end up too dry. I always have good luck with Betty Crocker Super Moist mix, but choose your favorite.
Maybe you're wondering why not brownie mix? Because I've never seen a strawberry brownie mix, so this is a hack. Yes, you can make strawberry brownies from scratch, but this is a shortcut. Also cake mix is less dense. These aren't as crusty and dense as regular brownies would be.
Don't scorch the butter when you melt it. You want it just melted, not bubbling hot. If there are still pieces unmelted when you remove it from the microwave, just stir until they are gone.
The chocolate Oreos add a bit of a chocolate flavor to the recipe, but you can go with Golden Oreos too. Or a completely different cookie all together! You can crush up whatever you have in your cabinet. Just keep it crunchy because that's an important part of this recipe in my humble opinion.
