- 1 1/2 cups apple cider
- 3/4 cup butter, melted
- 3/4 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon

- Sugar In The Raw (turbinado sugar) for topping

- 1/2 cup buttermilk
- 1 teaspoon pure vanilla extract
- 2 egg(s)
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
Instructions
- Prepare the apple cider by simmering it in a small saucepan for about 15-20 minutes until reduced in half (to about 3/4 cup). Cool to room temperature.
- Preheat oven to 400°F. Grease a muffin pan or insert liners for 16 muffins.
- In a large bowl, whisk together the apple cider, butter, sugar, brown sugar, buttermilk, and vanilla.
- Add the eggs and whisk until fully combined.
- Add the flour, baking powder, cinnamon, salt, and nutmeg. Mix well with a spoon or spatula utensil.
