- 1/2 cup butter softened
- 1 cup brown sugar
- 2 egg(s)
- 1 teaspoon pure vanilla extract
- 1 1/4 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips
Instructions
- Preheat the oven to 350°F/180°c. Line an 8 inch square baking tin with parchment paper, or spray with non-stick cooking spray. Set aside.
- Chop the butter into cubes and place in a light colored saucepan (this will allow you to check the color of the butter). Place the saucepan over a medium heat. Melt the butter, then bring to a simmer. Continue to simmer the butter, stirring often, for around 5 minutes or until the butter has turned a golden brown color. Remove from the heat and immediately pour the butter into a large mixing bowl.
- Add the brown sugar to the butter in the mixing bowl and whisk until well combined. Add the eggs and vanilla extract and whisk once again until well combined.
- Add the flour, baking powder and salt to the butter mixture. Mix until just combined.
- Fold through the semi-sweet and white chocolate chips.
- Pour the blondie batter into the prepared baking tin. Bake for 25 minutes, or until just cooked through.
- Set aside to cool in the tin completely before removing and slicing.
